Millionaires Shortbread

Ingredients
1/2 Ib butter
1/2 cup icing sugar
1/2 cup corn flour
1 tsp Vanilla essence
Flour as needed.

Caramel topping

2 oz butter
1 cup icing sugar
3 full tblsp caramel treat
Whisk together

METHOD


For the biscuit:
Beat together the butter and icing sugar until creamy. Add in the vanilla and corn flour and mix a little.
Lastly add just as much flour as needed to form a firm but soft dough.
Either press it into a rectangular baking pan, or roll out thickly onto a floured surface and cut into desired shapes with a cookie cutter.
Bake in a moderate pre-heated oven until golden.
Remove from oven and allow to cool.
For the topping:
Whisk together the butter and icing sugar. Add in the caramel and mix well.
Leave in fridge to set for a while.
Pipe caramel mixture onto biscuits and freeze for an hour.
Coat the whole biscuit in melted chocolate and decorate by dribbling melted white chocolate over

Delightful Date Desert Recipe

Ingredients:

1 cup chopped dates
1 cup chopped pecan nuts
1 cup boiling water
1 teaspoon bicarbonate of soda
1 cup sugar
1 egg
1 teaspoon vanilla essence
1 tablespoon butter
½ cup plain flour

Method:

Step 1

Pre-heat your oven on high
Lightly grease a casserole with oil and leave aside

Step 2

Cook the dates, nuts, water and bicarb on the stove for 1-2 minutes. Leave to cool

Step 3

Beat the sugar, egg vanilla, and butter together until creamy.
Add in the flour and mix altogether

Step 4

Add the date mixture to the creamed mixture and mix well together

Step 5

Pour the mixture into the prepared casserole and bake on 180 degrees/gas mark 4/5 for approximately 25 minutes.
Remove from oven when slightly firm but not dry.
Cut into squares (while still warm) and serve (when cooled) individually with fresh cream or vanilla ice-cream

Butter Cake Recipe

(250g) unsalted butter, at room temperature
7 oz (200g) plain flour/all purpose flour
1 tsp baking powder
7 oz (200g) castor sugar
4 eggs
½ tsp salt
4 tablespoons fresh milk or yogurt
1 teaspoon vanilla essence

Method:

1. Preheat the oven
2. Lightly grease a baking pan with some butter.
3. Mix  the flour and the baking powder together and sieve. Add in salt and mix well.  Set aside.
4. Use an electronic beater to mix butter and sugar until well  combined or pale yellow in colour. (Note: Sugar has not dissolved yet).
5. Add  in the first egg. Beat well after each addition of egg until creamy.
6. Scrape  down the sides for even mixing.
7. Add in vanilla essence and mix well.
8. Fold  in the flour into the mixture and mix well.
9. Finally, add in the milk/yogurt. 
10. Pour the mixture into the greased baking pan. Shake it lightly to distribute  cake mixture evenly.
11. Bake until golden brown and cooked, about 40 minutes.  Use a cake tester to test if it’s cooked.
12. Remove it from the oven and let  cool on the wire rack for another 5 minutes. Serve warm

Mango Desert

Ingredients

2 FRESH MANGOES OR 1 TIN OF MANGOES
1 MADEIRA CAKE
1 TIN CONDENSED MILK
WHIPPING CREAM
LEMON JUICE
SUGAR

Method:

1. KEEP A FEW SLICES OF MANGO ASIDE FOR GARNISHING,AND PUREE THE REST
 2. WHIP THE CREAM
 3. ADD CONDENSED MILK TO WHIPPED CREAM.
 4. ADD PUREED MANGO
 5. ADD SUGAR AND LEMON JUICE ACCORDING TO TASTE.
 6. SLICE MADEIRA CAKE AND ARRANGE IN LAYERS WITH MANGO MIXTURE IN A DISH.
 7. GARNISH WITH SLICES OF MANGO
 8. REFRIGERATE FOR A TLEAST 30 MINS BEFORE SERVING.

Pineapple Salsa

Ingredients:

3tbsp lime juice
1tbsp sunflower oil
2-3 green chillies, deseeded and finely chopped, Salt and freshly ground black pepper
432g can pineapple rings in natural juice, drained
1 large red pepper, deseeded and diced
1 small red onion, chopped
200g can sweetcorn niblets, drained.

Method:

Put lime-juice, oil chillies and seasoning in a jar and shake well.
Leave to stand for 20min to infuse flavour.
Mix pineapple, red onion, red pepper and corn together.
Shake the dressing again and pour over salsa and mix well.
Delicious served with chicken.

Brighten Hair with a Tea Treatment

What You’ll Need

Treatment 1

  1. 2 tea bags (chamomile for lighter colours, rooibos, for redheads; black tea for dark hair or brunettes)
  2. x2 cups water

Treatment 2

  1. Once a week — or whenever you feel you could use a shine boost — steep tea bags in boiling water for 10 minutes. Let the liquid cool to room temperature. (In a rush? Refrigerate it.)
  2. Pour the mixture over wet, just-washed hair, rubbing it through the way you would shampoo.
  3. Leave the rinse on for 10 minutes; wash and condition to seal in the silky, glossy results.
